MALT EXTRACT SYRUP

Produced using a variant of the brewing process, malted barley is mashed with water, allowing the enzymes to break down the starch and proteinaceous material of the malted grain. Insoluble fiber is removed, and the resulting sugary liquid, instead of being fermented into beer, is concentrated to make a viscous, stable liquid sweetener called malt extract syrup.

May be described as a viscous, tan coloured syrup with a sweet malty taste and aroma

Benefits:

  • Natural, non-diastatic sweetener providing flavour and colour
  • Natural and unique malty flavor, colour and aroma
  • Natural, Kosher, Halaal and non-GMO for a clean label
  • Product of South African origin
  • Produced in a FSSC 22000 certified factory

Applications:

  1. Can be used as a grain malt replacement or added as a brew extender in conventional mashing in the production of beer.
  2. Controls crystal formation in ice cream and frozen desert applications
  3. Acts as a flavour enhancer to confectionery products, particularly in chocolate manufacture
  4. Used in breakfast cereals to add natural sweetness, colour and flavour
  5. Used in bakery applications such as biscuits, crackers and yeast doughs such as bagels
  6. Savoury applications such as basting sauces, soups and gravies
